Cauliflower keeps you full for a long time but doesn’t add too many calories to your body. One cup of cauliflower contains only 25 calories. It is full of fibres, minerals, and vitamins. The high fibre content of cauliflower plays a substantial role in improving the digestive system. It contains ample amounts of vitamin B6, vitamin K, vitamin C, folate, magnesium, calcium, potassium, manganese, and phosphorus. It’s a blessing to have so many valuable nutrients in one vegetable. Cauliflower also provides an essential nutrient named choline. It assists in keeping up the structure of the cellular membrane, helps in the transmission of nerve impulses, decreases chronic inflammation, and increases fat absorption. This nutrient works like brain food and helps to develop memory, learning, sleep, and muscle movement.
Cauliflower is a rich source of antioxidants that protect our cells from dangerous free radicals and inflammation. It also contains a plant-based essential nutrient called Sulforaphane that might help to reduce the risk of different cardiovascular diseases and diabetes.

Christmas Roasted Whole Cauliflower
- 1 cauiflower (large)
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- 1 tablespoon olive oil (extra virgin)
- 2 tablespoons ginger-garlic paste
- Salt (to taste)
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 tablespoon coriander leaves (finely chopped)
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin powder

Preheat the oven to 180C. Line the baking tray with a baking sheet.

Take a mixing bowl and add all the ingredients except the cauliflower. Mix well.

Now take the cauliflower and cut out the green leaves and the woody stalk so that it can sit straight.

Rub the marinade all over the cauliflower. Place the cauliflower onto the baking sheet and bake for 60 minutes.

Garnish with coriander leaves.
