Frittatas are great for breakfast, snacks, light meal, or even for dinner. Here we will share a vegan mixed herb frittata recipe that is full of nutritional value and contains very few calories. We have used chickpea flour as the traditional egg alternative and combined it with some nutritious and flavourful herbs.

Chickpea flour
Chickpea flour is also known as besan or gram flour in some countries. It is gluten-free, rich in protein & fibre, and gives a unique nutty flavor to the dish. It is an excellent source of several vitamins and minerals including magnesium, iron, phosphorus, manganese, and copper.
Mushroom
Mushroom is a fat-free, cholesterol-free, low-calorie, & low-sodium food with an extreme amount of valuable nutrients. It is one of those scarce foods which can provide vitamin D. Mushroom is also a great source of various anti-oxidants, vitamins, & minerals including zinc, potassium, and selenium. Mushrooms might help to lower blood pressure, improve the immunity system, boost weight loss, promote lower cholesterol, develop brain health, and stimulate gut health.
Potato
Potato is a versatile vegetable filled with numerous minerals, vitamins, carbohydrates, and fibre. It’s great for our brain, muscle, heart, and nervous system. It provides energy and improves our digestive system. It also has anti-oxidants that boost our immunity system thus reducing the aging process.
Herbs of the mixed herb frittata
Now let’s talk about the health benefits of the herbs in the recipe. We have used mint, basil, and cilantro in the recipe. All of these are filled with health advantages. Mint contains essential oils, menthol, and rosmarinic acid. It has anti-inflammatory, antiseptic, and anti-aging properties. It helps with headaches and develops mental clarity.
Basil is rich in vitamin A, vitamin K, calcium, antioxidants, and anti-inflammatory properties. It regulates blood sugar, improves cholesterol levels, and is beneficial for diabetes. In many Asian countries, it is used as a medicine for the common cold. Basil tea is also very helpful to release stress. Along with antioxidants and anti-inflammatory properties, cilantro contains a unique nutrient called the chelation property which helps to remove heavy metals from our body. It is also used as an aromatherapy ingredient.

Mixed Herb Frittata
- Cast Iron Skillet
- 1 cup chickpea flour
- 1/2 teaspoon turmeric powder
- Salt (to taste)
- 1/4 teaspoon black salt
- 1 teaspoon pepper
- 1 tablespoon ginger-garlic paste
- 1.5 cup water
- 3 tablespoons olive oil
- 1/4 cup boiled mushroom
- 1/4 cup potato (boiled & diced)
- 2 tablespoons mint (chopped)
- 2 tablespoons basil (chopped)
- 2 tablespoons cilantro (chopped)

Preheat the oven to 180C.

Take a mixing bowl and add chickpea flour, turmeric powder, salt, black salt, pepper, and ginger-garlic paste. Mix well.

Now add water and make a smooth batter. Make sure that there are no lumps.

Heat the olive oil in a cast iron frying pan on high. Add mushroom, potato, and a pinch of salt. Sauté for 3 minutes.

Then add mint, basil, and cilantro. Cook for one more minute. Then remove from the heat.

Now pour the chickpea flour batter on top. Mix lightly. Bake for 20 – 25 minutes.
