Did you know that Oats are considered to be one of the healthiest grains on Earth? They are incredibly nutritious (in fact one of the most nutrient-dense foods you can eat), providing a well-balanced variety of vitamins and minerals. They are also an excellent source of fibre and complex carbohydrates.
Along with their impressive nutritional profile, Oats provide numerous health benefits with one major benefit being protecting against heart disease. Oats contain a large amount of a particular type of soluble fibre called beta-glucan. Beta-glucan has numerous health benefits including lowering LDL (the “bad” type of) cholesterol levels and protecting LDL cholesterol for oxidation (which is a significant step in the process of heart disease).
Oats are also a great source of multiple minerals such as manganese, selenium, phosphorus, magnesium, vitamin E, and flavonoids, which have antioxidant and anti-inflammatory benefits and can help with cardiovascular health. It has also been shown that oats, oat bran, and oat flour all may reduce the risk of coronary heart disease and colorectal cancer.
They are extremely versatile and can be incorporated into many meals throughout the day, although most commonly served at Breakfast. Overnight Oats are a wonderful way to serve them, simple to make and a great option for a quick, easy and nutritious meal to start the day. Creamy Blueberry Overnight Oats
A delicious, healthy way to start your day
- 1 Cup Coconut yogurt
- 1 1/2 Cup Rolled Oats
- 2 Cup Coconut milk
- 2 Tbsp Hemp seeds
- 1 tsp Vanilla
- 2 tbsp Peanut butter
- 4 tbsp Honey (or maple syrup for vegan)
- 1 Cup Blueberries
- Add all ingredients EXCEPT for the blueberries to a large mixing bowl. Gently mix until well combined.
- Divide the mixture between four mason jars.
- Top each jar with an even amount of blueberries. Secure the lid and place jars in the fridge.
- Chill for at least 4 – 6 hours, preferably overnight before serving.
