Avocado Hummus

A delicious twist on a classic healthy dip

Ingredients

Hummus:

  • 14 oz Canned chickpeas drained and rinsed
  • 1 Garlic clove
  • 4 tbsp Lemon juice
  • 3 tbsp Tahini
  • 2 tbsp Olive oil
  • ½ Avocado pitted and skin removed
  • 1 tsp Curry powder
  • Salt and pepper to taste

To serve:

  • 2 Lg Carrots peeled and cut in to sticks

Instructions

  • Add all the hummus ingredients into a food processor or blender. Mix on high speed, scraping down sides occasionally until it is a creamy, paste consistency.
  • Serve with carrot sticks (or preferred vegetable stick).
